In fairness to the logic: get a vegetarian burrito and add chicken or get low sodium soup and add salt. They both are trying extra hard to compete if you’d give what they’ve been missing it makes better than either. This might be an exception though.
Yeah but low sodium soup doesn’t generally substitute the salt with a more potent non-sodium salt substitute with a cloying aftertaste.

You’re ignoring the premise, products with dietary restrictions will over compensate and can be better than the original once you add that missing component back.
If the difference between a chicken burrito and a veggie burrito is “sub potato” then you should find better food trucks.
Yeah, you’re right. I think I was just considering my personal experiences, and I’ve only ever experienced 1:1 substitutions, especially with taco shops and the like
